The Vox Kitchen – Jip Van Den Bos

Boels Dolmans rider Jip Van Den Bos is in the Vox kitchen today and she’s cooking up a protein-heavy breakfast for vegans and non-vegans alike. Start your day right with Jip’s recipe below…

Chickpea Omelette (vegan)

This is the perfect recipe if you’re looking for a protein packed breakfast/lunch or dinner. All the spices and toppings can be adjusted to your own taste. Often I make the filling with what’s left in the fridge, but here are my favourite fillings & spices. 

Ingredients (For two people/ three or 4 four omelettes);

90gr chickpea flour
3 tbsp chia or flax seeds
1 tsp bakingpowder
1/2 tsp turmericpowder
1/2 tsp cumin
1/2 tsp coriander seeds
1/2 tsp paprika powder
Salt & pepper
350ml water

Toppings
1 onion
200gr spinach
200gr peas
Salt & pepper
Hummus

Mix all the ingredients for the omelette and let the batter rest for 15 minutes.

In the meanwhile heat a little olive oil in the pan and cook the onions for two minutes, add the spinach and peas with some salt & pepper and cook till the spinach has shrunk.

Now that the filling is ready, put it aside and start baking the omelettes.

Put again some olive oil in the pan and put it on medium high heat. 

Put a full ladle of batter in the pan and let it bake for five minutes. The top of the omelet should be almost dry. Turn the omelet around and bake for another two minutes.

Add the filling to your omelette together, with a tablespoon of humus.
