We are collecting recipes from the professional peloton to keep you fuelled during lockdown, wherever you are in the world. Pre or post training, breakfast, lunch, dinner or snacking, healthy and not-so-healthy, we will have all the recipes you need from some of the best bike riders in the world.
First up, Team Sunweb rider Floortje Mackaij brings you her famous banana bread.
3 bananas, mashed
100g almond flour
100g spelt flour
1.5 tsp baking powder
1 tsp baking soda
Pinch of salt
1 tsp cinnamon
3 large eggs, whisked
A bit of almond milk
2 tsp lemon juice
10 dates, pitted and chopped
Simply throw all the ingredient in to one big bowl and combine – mix until smooth. Cook for 45 mins at 185 degrees.
I like to add some raisins, blueberries and nuts at the end. If you’re feeling extra sweet you can add 50g butter and 50g of sugar.
