Berry & Apple mixture:
1 large red apple thinly sliced (see photos below)
1 tbsp of cornstarch
2 tbsp of Coconut sugar
½ tbsp of fresh lemon juice
½ tsp of Cinnamon
130 grams of frozen berries
Method
Tart pastry:
In a mixing bowl combine all pastry mixture ingredients, squeezing together to form a ball. Wrap in plastic wrap and place in the fridge while you prepare the berry apple mixture.
After the pastry dough has chilled for about 15 min, unwrap & place the dough between two sheets of baking paper. Roll out with the rolling pin forming a large circle roughly x 27 cm.
Place the pastry onto a baking tray that’s lined with fresh baking paper using the following method; To loosen pastry, carefully peel back one side of baking paper, flipping and repeating on the other side. Set aside, ready to add your Berries apple mixture.
Berry & Apple mixture:
Cut the apple into quarters, discard the core and thinly slice the apple quarters..
In a mixing bowl combine all the ingredients of the Berry & Apple mixture. Mix all until everything is coated well. Place the mixture onto the middle of the prepared pastry, folding up the sides of the pastry. Place into the preheated oven and bake 170degrees for 40min.
Garnish with fresh mint, served with Greek yoghurt or nice cream 🙂
