These Training Cookies only takeabout 20 minutes to make, 10 minutes to prep and 10 minutes to bake in the oven. With good whole ingredients consisting of medjool dates that contain vitamins and minerals. And also the Cashews and almonds containing minerals & antioxidants.
These are easy to eat on the bike and are not too dry to digest. They make up for some good energy to fuel your performance.
Kitchen tools you will need for this recipe are:
- A food processor
- Kitchen scales
- Preheat oven to 170°C
Makes about 12 cookies
Ingredients
30 grams Cashew nuts
60 grams Almonds
6 x medjool dates pitted
100 grams Oats
½ Tsp Sea salt
2 x Tbsp olive oil
1 Egg
(Optional; drizzle with dark chocolate)
Method
Preheat the oven to 170 degrees.
Blitz in a food processor the almond and cashew nuts until a coarse texture forms (see photo below). Next add all other ingredients and continue to blitz until well combined.
Spoon out mixture and shape into cookies, place onto a baking tray lined with baking paper.
Place into a preheated oven (170°) and bake for 10 minutes.
Let the cookies completely cool (Optional; drizzle with dark chocolate).
Pre wrap and store in the freezer to keep well preserved and for fast ready training food.
