Apricot energy balls

These are great snacks before and after exercise with the sugar from the fruit and a small amount of carbohydrates. 

Kitchen tools: 

Food processor 

Ingredients:

50 grams of sunflower seeds 

50 grams of Pumpkin 

210 Dried apricot 

100 grams of medjool dates 

100 grams of Cashew nuts 

200 grams of Rolled Oats 

1 Tsp Fresh lemon Juice 

3-4 Tbsp of water 

Tsp Sea salt 

(50 grams of Desiccated coconut for rolling the balls in last step) Method: 

Place the nuts and seeds in the food processor and blitz for about 30 seconds. 

Then add all other ingredients (Just not the Desiccated coconut) and continue to blitz until all is combined well. Take the food processor blade out and set aside, take a spoon full of the mixture and roll into balls. Then roll the ball in some of the desiccated coconut. Continue to do this with the rest of the mixture. 

These can be stored in the fridge in an airtight container for 1 week or in the freezer for 2-3 months. Enjoy!
